Vegan Cooking is Impossible

I am writing this with the understanding that I will get my tush kicked by my friend.

Sorry Laura Jill...

So I decided it was just plain silly that my husband should be eating only 2 things in the house because he is moving toward vegan eating.

Vegan is no dairy, animal products or anything of that sort.

Fred had open heart surgery in 2002. He radically changed his diet to reflect a more positive lifestyle. He gave up Pepsi, eggs, red meat and many other things that make life worthwhile. Poor Fred.

So in an effort to help him I asked Laura Jill (Cafe Laura Blog) to give me a cookbook to look into. I want to be able to feed Fred at home. I am sorry to say I was taken aback by the dishes these books suggested. They are just too intense.



Perhaps I am just not as adventurous as my friend. I might have to have her as a guest in my house to each me some vegan recipes. Say it, COWARD!



Now these look totally awesome. Here is the recipe for the FAUX-STESS CUPCAKES , But tempah, lettuce and tomato look sandwiches look ok. It's not for me to eat but for Fred. However, my goal was to ULTIMATELY to make 1 meal for the 4 of us. I can see the girls trying it but not necessarily scarfing some of these vegan recipes down. Fred would inhale.

Tonight's dinner was:

Fred: Vegan pizza (1 with soy cheese and artichoke) (1 with soy cheese and veggie protein)

Ellie and Sagan: Bertolli Lasagna, garlic sticks and asparagus

Me: After making 2 dinners I was not going to make anything for myself. I am carbless once again. It will likely be a can of soup.



Now this picture is of a Chickpea and Broccoli casserole. I think this looks like something we all might eat. This might be a dinner to cook when Fred returns from his man-cation next week.

I bow my head in shame at scoffing at vegan cooking. Thank goodness Whole Foods (aka Whole Paycheck) is just a 10 minute drive from the house. He won't starve to death with that grocery there.

Fred usually escapes the house and goes to his favorite restaurant ETHOS. Laura Jill has been there many times. Fred is a regular. They welcome him by name when he walks in the door. Friday's are meatball subs and chili day. (Not real meat mind you but veggie protein). He basically stands at the door when they open and they know EXACTLY what he wants. It's sweet.

Next time I'm in Orlando, Jeanne, or you're in South Florida, we'll sit down and I'll tutor you. Seriously, if I can do it, you can do it. Remember, I wasn't always vegan, and I wasn't always a chef. ;)

When I went to Ethos last week with my BFF, I thought it would be funny if I saw Fred there, because I totally would have said hi, having recognized him from pictures!

And there will be no tush-kicking. I'm non-violent, you know! :)
